WHAT YOU NEED

2 1/2 cup Blanched almond flour
1/4 cup Ghee measured solid, then melt
1 large Egg or 2 tbsp more ghee
1/4 tsp Sea salt or 1/2 tsp if you wish a more savory pie crust
1/2 tsp Vanilla extract wish is optional
1/3 cup Erythritol

WHAT YOU DO

Preheat the oven to 350 degrees F or to 177 degrees C. You’ll need to line the bottom of a 9 in or 23 cm round pie pan with parchment paper or grease it very well.

Now in a large bow you need to mix the almond flower, erythritol and sea salt. You don’t have to use erythritol if you wish to use a different sweetener.

Stir in the egg and the melted ghee until itis well combined. NOTE: If you will be using vanilla, stir it into the melted ghee BEFORE you add the dry ingredients.

The dough will be dry and crumbly but just keep mixing, pressing and stirring it until it is uniform and no almond flour powder left.

Press the dough into the bottom of the pan you prepared. You can also flute the edges if desired; Don’t worry if it crumbles when you do this, just press it back together. Carefully poke holes in the surface using a fork.

Bake for 10-12 minutes, until lightly golden. Important Note: Make sure you do this pre-bake BEFORE you add the filling below.

WHAT YOU NEED For This Tasty Healthy Pumpkin Pie

1 15oz can Pumpkin puree
1/2 cup Heavy cream or you can us coconut cream if you want it to be dairy free.
1 15-oz can Pumpkin puree
2/3 cup Powdered erythrito
2 tsp Pumpkin pie spice
2 large Eggs room temperature
1/4 tsp Sea salt
1 tsp Vanilla extract (optional)

WHAT YOU DO

Beat all the ingredients together at medium low speed until it is smooth. Be careful not ot over mix.

When the pie crust is done baking reduce the oven temperature to 325 degrees F or 163 degrees C. Cool the crust on the counter for at least 15 minutes. If you have time let it coold even longer.

Now pour the filling into the crust and gently tap on the counter to release any air bubbles. Bake for 40 to 50 minutes or until the pie is almost set but still is slightly jiggly in the center. If you see the crust starting to brown then cover the crust edge with foil and put it back in the oven until the filling is done. It should still jiggle a bit in the center.

Let it cool completely on the counter before you refrigerate it. Before you slice it make sure it has been in the refrigerator for at least an hour. The pie can be refrigerated overnight.
